Easy homemade chicken fajita seasoning mix made from scratch. All natural and no additives or preservatives.
Ingredients:
2 1/2 tbsp. paprika
2 tbsp. salt
2 tbsp. garlic powder
1 tbsp. pepper
1 tbsp. onion powder
1 tbsp. cayenne pepper (Add more or less according to your tastes.)
1 tbsp. dried oregano
1 tbsp. dried thyme
Directions:
Place all of the above ingredients in a airtight jar or ziploc bag.
To use this seasoning, slice chicken breasts into 1/4 inch thick slices. I use two chicken breast pieces for two people and there’s usually leftovers for lunch the next day. Wash, seed and cut 1 or 2 red bell peppers (or green or yellow, whatever is in your fridge) into strips. Wash and thinly slice 1 medium sized onion. White, red or yellow. They all work great. Put the chicken, sliced peppers and onion in a large bowl. Drizzle about 1/3 cup light olive oil on and mix to coat everything. Sprinkly the seasoning mix over everything and mix again. Pour the entire contects of the bowl onto a large sheet pan that’s sprayed with a cooking spray (Pam, etc.) and spreak out into a single layer. If your pan is small, use two pans.
Bake @ 375F for about 25-30 minutes, stirring and flipping about half way through that time. Serve hot over tortilla shells, add your favorite fajita toppings. Enjoy!
You can also use this mix when you grill chicken, sprinkle it on and use it as a seasoning for your chicken when you’re roasting a whole chicken in the oven.
